Chef Biography
Pascal Demory was born in the City of Cambrai, in the northern part of France. He was educated at the Institute Provincial des Industries ex du Tourisme in Brussels, Belgium. Following his apprenticing in several French bakeries, he opened his first bakery specializing in fine pastries and chocolate, and then later on, a second bakery featuring delicate sugar decorations and ice cream.
In 1991, he sold his two bakeries and joined the Hotel Sofitel La Defense in Paris as Chef Pâtissier. In 1994, Sofitel offered him the position as executive pastry chef at the Hotel Sofitel in Minneapolis. It was there, later in 1994 that the Great Chefs television crew taped Chef Demory for the Discovery Channel’s Great Chefs – Great Cities series.
He then joined the Karisma Hotel group and became the executive chef at Karisma’s Riviera Maya, 30 miles south of Cancun, Mexico where he remains today.
