Chef Biography
Roger Wiles was the sous chef at À l’Ecu de France and chef patron at Own restaurant before becoming the executive chef of The Inn on the Park in London, UK. He then moved to Bermuda to become executive chef at Fourways Inn, and then on to the St. James Club and the Royal Antiguan Ramada Hotel, both in Antigua.
In 1997, the Great Chefs television crew caught up with Chef Wiles at the Half Moon Resort in Montego Bay, Jamaica where they taped him late one evening and into the early morning, for their Great Chefs of the Caribbean television series for the Discovery Channel.
Several months later, a large portion of the resort caught fire including the kitchen (but has since rebuilt). In 1997, following the Half Moon fire in Jamaica, Chef Wiles moved to Georgetown, DC to run Bistro Français. In late 2015, it closed after 40 years and in 2016, Chef Roger became the Chef de Cuisine at the new L’Hommage Bistro Français in Washington, DC.
