Chef Biography
Royal Dahlstrom always had an interest in cooking, especially baking. He attended the Culinary Arts Program at the Northeast Metro Technical Institute in Minnesota in 1988, then on to the University of Missouri.
After graduating, he returned to Minneapolis to work at the Franklin Street Bakery. That’s where the Great Chefs television team taped him for the Discovery Channel’s Great Chefs – Great Cities series.
In 1995, he moved over to the St. Paul Hotel as pastry chef, and in 1998 became sous chef at the California Café. In 1999 he became the executive chef at Minneapolis’ La Toscana Restaurant, and then the Napa Valley Grille from 2004 to 2006. He ran his own catering and consulting firm called Chef Royal, for the next ten years until 2015, when he accepted the position of executive chef of Macalester College in St. Paul, Minnesota, where he is today.
