Ingredients
- Active Dry Yeast - 1 package
- Cooked Rice - 1-1/2 cups
- Eggs - 3 beaten
- All-Purpose Flour - 1-1/3 to 2 cups
- Sugar - 1/3 cup
- Salt - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Freshly ground nutmeg - 1 teaspoon
- Oil for deep frying
- Confectioner’s sugar for dusting
Instructions
n a large mixing bowl, soften the yeast in warm water. Stir in the rice. Add the eggs, 1-1/3 cups flour, salt, cinnamon, and nutmeg. Beat well. If the batter is runny, gradually stir in more flour until the consistency is fairly stiff. Cover and let rise 30 minutes to 1 hour. Heat the oil to 360 F in a deep fryer or deep heavy saucepan. Form into 1-1/2-inch balls. Fry three or four at a time in the fat until golden brown; remove and drain on towels. Sprinkle with confectioner’s sugar and serve immediately.
